The Festive Season has always been a special time of year here, at Lake House, Daylesford. 40 years since we opened our doors, we’re delighted to welcome multi-generations and to be a favoured place for families to gather and celebrate milestones and occasions. The Festive Season is no exception. Come December, Christmas lights, decorated Christmas trees, sumptuous wreaths and twinkling candles welcome guests from near and far. Each year the Lake House take on the traditional Christmas pudding has always been central to a long lunch or dinner over the Christmas holidays, and in recent years those who are not able to join the festivities at our iconic House on the Lake can pre-order their own puddings to enjoy at home. But you’d better be quick to place your order, with only a limited number of puddings available – they tend to sell out quickly each year. Made right here in Daylesford, this is a dense pudding with rich abundant fruit; raisins, sultanas, currants, orange, lemon, and grapefruit peel and segments, apples, ginger, spices, and a generous dose of dark ale, rum, sherry & Madeira. Dress it up with dark fruits; cherries, blackberries, blueberries, and mulberries, or perhaps fresh sweet mango and citrus for an "Aussie Summer" feel? It’s your choice. Written in verse by Culinary Director Alla Wolf-Tasker AM, with stunning illustrations by the late Allan Wolf-Tasker, this heartfelt book tackles themes of problem solving by a colourful, diverse community. It explores resilience, courage, a reflection on greed, the pursuit of personal wealth at the expense of others and the stifling sense of solitude and “aloneness” it engenders. Yet, it also celebrates the joys that are to be had through music, good food and friendship when a community prevails and celebrates. The verses in the book were written some 40 years ago by Alla Wolf-Tasker, who penned the poem, and her late husband Allan Wolf-Tasker, who brought it to life with his watercolour illustrations. The production of the book was paused as both became engrossed with the building of Lake House. It was the arrival of two grandchildren that spurred the resurrection of the little book – Allan completing the illustration in 2022 shortly before his death in December of that year. Alla's intent on seeing the project to fruition has overseen its production. “To my mind its just as relevant as it was 40 years ago. Perhaps more so... And I think its a fitting reminder of Allan's varied skills. The beautiful illustrations will bring much joy to children who’ll no doubt also enjoy the rhyming couplets as much as I once did.” Alla Wolf-Tasker AM Proceeds from the book are being used for bursaries for young enthusiasts in the fields of the Arts, Hospitality and Regenerative Agriculture. This distinctive high-carbon steel garden fork gives a nod to the style and quality of the garden tools of yesteryear. It has been made using traditional manufacturing techniques, with an attention to design detail which delivers a digging fork of strength and durability, to make gardening easier for everyone. This garden fork has been tested to a breaking strain of 100kg, far more than the British standard of 55kg. The high-carbon steel tines and socket are solid forged from a single piece of metal for optimal strength, with a textured powder coating in an unusual antique bronze shade for protection from corrosion. The fork features a robust D-handle in high-carbon steel for maximum life, and the joints at socket and D-handle are double-riveted for a secure connection. The FSC® ash shaft and grip give enduring comfort, and the shaft bears a brass plaque as a hallmark of the reassurance of these two trusted names in gardening.

Lake House began operating in 1984. Hand built by artist and builder, the late Allan Wolf-Tasker and his chef and dreamer wife, Alla Wolf-Tasker AM, it was simple in its original mission. A 40-seat weekend only restaurant that might emulate Alla’s experiences of top end French regional hospitality in the 70’s. Fine cooking, local produce, seasonality, great service. A restaurant worthy of a journey in itself, not just a detour. 40 years on, whilst Lake House certainly looks much different to what it was in those early years, our guests continue to remark on the connection and inspiration they feel here. An immersive beekeeping experience for individuals keen to learn about the Art of Beekeeping and every aspect of hive care and management. This class will take you from hive set up and placement, through to hive caretaking as well as helping you navigate rules and regulations, pest and disease management, understanding the inner workings of the hive and behaviours of the honeybee and so much more. Delve into the more complex aspects of beekeeping. Learn through hands-on experience and boundless knowledge of your host Dan the Bee Man, who has decades of experience in the world of beekeeping and hive caretaking. Please join us if you are intrigued and want to learn more amazing facts and add to your knowledge and understanding of the humble, yet incredible honeybee. Your class also includes a tour of the working regenerative farm and semi-underground bake house, where pastries and refreshments will be served. At Dairy Flat Farm we focus on slow fermented sourdough baguettes and loaves. We utilise only small-scale millers and growers of non GMO grains and often incorporate herbs, flowers and vegetables from our regenerative farm in associated viennoiserie. This workshop includes hands on tuition in and introduction to slow fermentation, sourdough baking, shaping and moulding. Also included is a private tour of the Dairy Flat Farm vineyard, orchard, olive grove & productive herb & vegetable gardens which supply the Lake House kitchens. Participants will also receive recipe cards, a sourdough starter, banneton basket, Dairy Flat apron & tote to take home with them. This fragrant, sweet blend combines some of the region’s best ingredients including elderberry which is renowned for its high levels of vitamin C and antioxidants, making it a powerful drink for those wanting to boost their immune system. The combination of four different types of berries with floral notes makes it a relaxing and calming tea drunk warm in the morning or over ice in the afternoon.
