Made for us right here in Daylesford to the famous Lake House recipe, this is a dense pudding with rich abundant fruit; raisins, sultanas, currants, orange, lemon, and grapefruit peel and segments, apples, ginger, spices, and a generous dose of dark ale, rum, sherry & Madeira.
Dress it up with dark fruits; cherries, blackberries, blueberries, and mulberries, or perhaps fresh sweet mango and citrus for an “Aussie Summer” feel? It’s your choice. We recommend an Amaro on ice to serve alongside, but you can also never go wrong with a glass of chilled Champagne.
